Feeling A Bit Crabby?

I don’t know about you but I LOVE crab!

I mean, let’s face it – it is poor man’s lobster.

You can boil it,

broil it,

fry it,

quiche it,

sautee it,

barbecue it,

and even roast it.

You can make crab cakes,

fettucini,

cocktails,

seafood salad,

crab chowder,

crab quiche,

crab bites

and even sushi!

And, my friends know I love it, too!

So it came as no surprise when one day my friend, Jake, popped up asking about how to prepare crabs.

“What do you do with crabs?” he asked.

“Crab?” I asked clearly ready to dive off he deep end.

“Yes.” he answered slowly.

“You can do some amazing this with crab!” I started.

“But-” he began.

“Do you like deep fried crab?” I asked.

He looked at me.

“We can make some incredible roasted crab dip! Do you have any crackers?”

“Yes, but-” he started.

“Of course, we could always make some tempura. I absolutely love that!” I chimed.

“Okay, but -“

“We could even go with raw crab if you would like some sushi?”

“Not quite was I was looking for.”

“I have all kinds of seafood chowder recipes if that is more your speed?” I suggested.

“Not really and what I ” I interrupted him.

“I got it! Crab Cakes!”

“No.”

“Why not? Everyone loves crab cakes! Seriously.” I was incredulous.

“I didn’t want to know how to cook crab!” Jake snapped.

“Then what did you want?” I barked.

“I want to know how to get rid of crabs.”

“You mean…?”

“Yup!”

“Oooooooooow………The pharmacy it is!”

NOW LET’S DO IT RIGHT!!!

Crab Cakes

Ingredients:

  • Bread crumbs, 4 ounces 
  • 1 lemon
  • Tarragon
  • Red Pepper
  • Mayonnaise, 1/2 cup
  • 1 Scallion
  • Crabmeat, 1/2 lb.
  • 1 egg
  • Unsalted butter, 1/4 cup
  • Secret Ingredient: 1 Crushed garlic clove
  1. Melt 1/2 of the butter in a nonstick skillet
  2. In a mixing bowl, whisk the mayo and egg together.
  3. Slice the lemon and squeeze the juice into the bowl. Discard the rest.
  4. Melt the remaining butter and add to the mixture along with the spices to taste.
  5. Chop the scallion and add to the mixture along with the garlic and bread crumbs.
  6. Crushed and chop the crab meat and mix together with the egg/spice mixture.
  7. Shape the mixture into balls about the size of a large egg.
  8. Crush the balls and lightly fry them in the melted butter.
  9. Serve with a sour cream dipping sauce.
  10. ENJOY!!!
