Yeah, I know there was an election this past week but I have something more important going on.

I am fat…
or so the doctor tells me…
GRRRRRRR!
I hate dieting.
Let me repeat that…
I HATE dieting.
I mean I know I have to cut down on my cholesterol and fat intake but the list of stuff I have to avoid makes me cringe:
Shrimp…I could not BELIEVE how much cholesterol one shrimp has.
Damn!
Smoked salmon…the fat content is just horrid. I thought all fish was supposed to be healthy!
Grrrr!
Cheese!…No no no!!! Fat and cholesterol to beat the band.
I am tearing up!
Beef and Pork! NOOOOOOOOOOOOOOOOO!
Just shoot me now! Please!
So I started to look online for healthy recipes. I thought I would find infinite recipes with infinite choices to whet my appetite.
I was wrong.
Every single damn one of them had the same nasty meat substitute…
Zucchini! The cilantro of meat substitutes. The only vegetable that I know that can compete with Okra to end up on the Buffet in Hell.
But, I tried. God knows I tried.
Zucchini fried in butter? Tastes like butter flavored WD-40.
Broiled zucchini? Ever tasted hot asphalt? I now have.
Zucchini in a marinara sauce? Tomato flavored Pine Sol. Yuck!
So I gave it one last try: Zucchini in an Olive Oil and Aflredo Sauce over Angel Hair Pasta.
I cleaned and diced the zucchini then I lightly sauteed it in olive oil with just a touch of truffle oil. Diced onions and small amount of freshly diced garlic along with a small amount of fresh oregano and basil. Mixing in a small amount of low-fat cream, I took a deep breath.
Boy, did that smell great!
Boy, did that taste awful!
Zucchini has all of the flavor of petroleum jelly. Mix that with garlic and oregano and you have what I was eating. Even the texture was disgusting…UGH!
BUT I ATE THE WHOLE DAMN THING! After all, who let’s food go to waste during a pandemic?
Urrrrrrrp!
NOW LET’S DO IT RIGHT!!!
Broccoli Alfredo With Olive Oil and Truffle Oil
Ingredients:
Two lbs. Broccoli Florets
2 cups Olive Oil
1 tbsp. Truffle Oil
Fresh Oregano
Fresh Basil
1 small Red Onion
1 Green Pepper
Salt
Pepper
12 Black Olives, pitted
12 Green Olives, pitted
Secret Ingredient: 1 cup Low Fat Sour Cream
- Clean the florets and cut them into smaller pieces.
- In a large non stick pan, heat the olive oil and truffle oil.
- Slice the olives and add to the pan along with the broccoli. Lightly saute but do not overly cook the brocolli.
- Chop oregano and basil to taste and add as well.
- Dice the onion and green pepper and add to the pan.
- Add salt and pepper to taste and saute until done.
- Add the sour cream but do not allow to carmelize.
- Serve over your favorite pasta.
- Serves 6
