Those of you who know me know that when I cook, I cook a lot.
Not just a lot.
A LOT!
Being a former caterer and a Master Cook in the SCA, it is sort of expected. The standing joke is that I have enough food in my fridge to feed an entire Boy Scout Jamboree on a Friday and then turn around and feed the entire Mormon Tabernacle Choir from the freezer on the Saturday. Oh, and brunch for the gay boys on Sunday.
I also like to experiment in my cooking so I always have leftovers from both the successes and the failures – those the dogs can’t eat. (Have you ever seen a kennel after a dog eats curry? – Jackson Pollock would be proud…)
So, about a month ago, my husband went searching for something in the freezer. Let’s just say my husband is many things but a cook he is not.
He comes up the basement stairs and states, “You need to clean out the freezers. There is just too much food in there.”
“Really? You can never have enough food.”, I said.
“Oh, and this pantry is overflowing. Who needs all this stuff?”
“Like what?”
“Bread crumbs?
“To distract the birds while we run. Needed.”
“Why do we have all of this cheese?”, he asked.
“Grilled cheese, anyone?” I grinned.
“Cheddar biscuit mix?”
“Needed.”
“Why?”
“So we can munch on them while we watch the zombies march past.”
“How about all of this yeast?”
“You like my focaccia, don’t you?” I answered.
“That’s not the the point.”
“What is?”
“Just clean it out.”
Lucky for him, I tend to drag my feet…
Enter COVID-19.
Huge lines at the grocery store…painfully long lines
Hoarding has meant some of the most needed items are disappearing. Toilet paper, paper towels, flour and cheese.
Even things like…YEAST! MWAHAHAHAHAHAHAHA!
“When are you going shopping?” he asked.
Yeah, I love him…
NOW LET’S DO IT RIGHT!
Cheddar Biscuits
INGREDIENTS:
- All-purpose flour, 2 cups
- Garlic powder
- Cayenne pepper, ground
- Buttermilk or whipping cream, 1 cup
- Sea Salt
- Sugar, ¼ cup
- Baking powder, 1 tablespoon
- 1 cup butter
- Cheddar Cheese, 8 oz.
- Parsley, fresh
- Preheat the over to 450 degrees F.
- Melt the butter in a small saucepan.
- Line a baking pan with parchment paper.
- Sift together flour, sugar and baking powder. Add garlic powder, salt and cayenne to taste.
- Mix together ½ of the melted butter and the buttermilk and whisk vigorously.
- Add dry goods to butter mixture and fold together gently.
7. Roughly grate cheese and mix in.
8. With your hands, form small balls of dough about the size of a ping pong ball and place on parchment paper. GENTLY flatten them.
9.Bake biscuits for ten minutes or so until brown and remove from oven.
10. Mix garlic to taste with the remaining melted butter. Chop fresh parsley to taste and add. Brush the top of the hot biscuits lightly with the mixture and serve!
11. Serves eight (unless someone gets greedy – then it serves four).
